My mom was actually the one to get me hooked on pork rinds. I’ve found that they are perfectly crisp and crunchy. They definitely satisfy that potato chip craving! On top of that, they have zero grams of carbs so you don’t have to worry about going above your carb limit when indulging on them (and believe me, you’ll want to once you’ve tasted them!). Once you add some salt, garlic, and a few other spices, you’ve got some serious pork and garlic keto croutons that only took 5-10 minutes to make!

Pork and Garlic Keto Croutons
Ingredients
- 1 ounce fried pork rinds
- 1 tbsp extra virgin olive oil unfiltered
- 1 clove garlic peeled and sliced thin
- granulated garlic
- kosher salt
- ground black pepper fresh
Instructions
- Pick out the smallest pork skins in the bag.
- Heat olive oil and sliced garlic clove in a small nonstick, oven safe, skillet over medium high heat. When garlic JUST begins to turn golden, remove and reserve. Tump pork skins into hot oil. Remove from heat.
- Add granulated garlic, kosher salt, and freshly ground black pepper. Keep tossing the oil and pork skins to get them to absorb as much oil as possible. Finish for 3-4 minutes in a preheated 350° oven until pork rinds are very crispy.
- Remove from heat, add the garlic slivers back to the skins, and serve immediately on top of salads or soups.
Notes
A few tips for when picking out pork rinds
- Look for pork rinds that are puffy and light in color. Those are more crisp and easier to chew.
- Avoid flavored pork rinds, even the ‘salt & pepper’ flavor, nearly all contain MSG and other artificial flavors.
- Trader Joe’s doesn’t offer pork rinds, so Walmart is normally the best bet. They have quite a few varieties available.
