Here’s a British royal relic, even though it was created well over 50 years ago for the coronation of Queen Elizabeth II, is similarly still alive and kicking around the world: Coronation Chicken.
A mixture of cooked chicken and creamy curry-flavored dressing is often served either on a salad or as the filling of a sandwich. The strong curry flavor combined with the creamy dressing is thought to represent the hearty traditional flavors of England along with the popular spicy flavors of Indian foods found throughout the UK.
At its most basic, it’s a cold chicken salad based in a curried mayonnaise. Most Coronation Chicken Salad recipes call for fruits — but for keto fruits are not recommended , so I’ve made some adjustments. This dish is retro fabulous. I love it because it includes all the pillars of comfort: shredded meaty chicken, creamy mayo, and then out of nowhere, curry. It is a sensation, because out of something so common came something just exotic enough to make it special.
Keto Coronation Chicken Salad
This is my Keto Coronation Chicken Salad version: shredded cold rotisserie chicken breast, curry, mayonnaise, fresh cilantro, and crunchy, summery celery. Throw it together in a big bowl, and let it sit, if you can, overnight. 🙂
Keto Coronation Chicken Salad
Ingredients
- 1/2 cup real Mayonnaise Hellmann’s
- 1/2 tbsp milk
- 1 1/2 tsp curry powder
- 2 tbsp fresh cilantro chopped
- 1/4 lemon juice
- salt and freshly ground black pepper to taste
- 2 ribs celery diced
- 2 breasts from a rotisserie chicken, skin discarded, meat shredded
- Optional Shredded hard cheese ( Parmesan, Cheddar) and sliced red pepper for decoration.
Instructions
- Put chicken breasts in a medium saucepan and bring to a bare simmer over medium-high heat. Cook until thighs register 165°F on an instant-read thermometer, about 5 minutes after achieving a simmer. Remove from heat. Allow chicken to cool in the stock and and when cool enough to handle remove chicken and chop into 1/2 inch pieces and set aside. Reserve strained stock for another use.
- In a large bowl, whisk together mayonnaise, milk, curry powder, cilantro, lemon juice, salt and pepper until well combined.
- Gently toss the celery and chicken in the curry sauce.

This Coronation Chicken is fantastic for a picnic alongside some strong tea, or as a meal-sized salad. You can happily make it ahead and keep it in your fridge overnight—or even for up to 3 days without much damage.
